Matbucha - Israeli 7-Spice Chicken

Some like it hot, and this Sephardi-based chicken dish uses a blend of seven delicate spices to make a sumptuous chicken dish for any occasion.

 

This recipe was adapted from an Israeli cookbook - feel free to experiment and add your own ingredients - but don't forget to let us know how you get on!

 

Ingredients For the Chicken:

  • 2 jointed chickens
  • 1 large onion (thinly sliced)
  • 3 cloves garlic (chopped)
  • 1 teaspoon ground ginger
  • 1 hot diced chilli pepper
  • some chopped coriander
  • small pinch cinnamon
  • small pinch cumin
  • salt and pepper

 

Ingredients For The Sauce:

  • 9 dessertspoons of soy sauce.
  • 3 dessertspoons of sugar.
  • 9 tablespoons red 'kiddush' wine (or red sweet / fortified wine if you can't get kiddush wine).

 

Directions:

  • Mix the sauce ingredients together in a bowl or jug.
  • Place all the chicken ingredients in an oven-proof dish and pour the sauce over.
  • Bake in a medium-hot oven.
  • Uncover for the last half hour of cooking to brown the onions and chicken.

 

Serving Suggestion:
Serve with potatoes or rice and green vegetables.

 

Note:
I sometimes add small whole / baby potatoes and green beans to the dish before cooking to make it an all-in-one recipe. If you do this, don't forget to increase the amount of sauce mix so that it won't dry out.
