Mediterranean Salad... With A Twist

Light, healthy and Israeli

Tabouli is a light, healthy and wonderfully flavoured salad dish with couscous.


Originating in Turkey and now adopted into Israeli cuisine, it's certainly a great tasting salad, with a difference.






  • 1 small-to-medium pack of couscous soaked in boiling water for 2 hours
  • 1/3 bunch parsley (finely chopped)
  • 3 medium fresh tomatoes (diced small)
  • 4 spring onions (finely sliced)
  • 1/4 teacup olive oil
  • 1/3 teacup lemon juice
  • 1/2 tablespoon chopped mint
  • salt (to taste)



  • Rub and separate couscous grains when cool.
  • Mix all ingredients together adding olive oil last.
  • Refrigerate overnight to allow the flavours to marinate.
  • Serve with a lemon and parsley garnish
