Eggs and Onions

Healthy, economical, and really tasty...

Now more fashionable than ever!

"Eggs and Onions" was common in old-fashioned Jewish households, dating back to the days when we had very little to live on, so you had to learn how to buy a little bit - and then figure out a way to make it go around!


It is now quite commonly eaten with 'Lox' (chopped smoked salmon).
Believe me, if you make lox with eggs and onions a regular part of your diet, you'll be able to enjoy a great tasting, healthy and very economical meal - great for breakfast, brunch or just as a special treat.

 

Ingredients:

  • 5-6 tablespoons olive oil
  • 1 small thinly sliced onion
  • a few finely chopped spring onions
  • 6 large eggs boiled and chopped
  • Salt and pepper to taste

 

Directions:

  • Fry the sliced onions until golden brown and add seasoning
  • Set aside to cool slightly.
  • Transfer to large bowl and add the spring onions and eggs and incorporate all the ingredients well without mashing the mixture.
  • Chill in the fridge.
  • The mixture will be fairly loose - more oil can be added if desired.
